Chicken Spinach Roll-Up Pasta

This is something that my Mom made when we were growing up. Unfortunately she never wrote down the recipe so I had to wing it! This is what the recipe has morphed into:

1/2 package of lasagna noodles, split in half and cooked

1 lb. chicken breasts, cooked and pulled (or you can put them in a food processor)

1/2 bag of fresh spinach, chopped

1 1/2 cups of mozzarella cheese, divided

16 oz. White Sauce (store bought or make your own), divide

1 t. Garlic Powder

1/2 t. Oregano

1/2 t. Basil

Salt and Pepper to taste

Pre-heat oven to 350°. Blend together the chicken, spinach, 3/4 c. Mozzarella cheese, 6 oz. white sauce and spices. Spoon a generous amount onto a lasagna noodle and roll up. Place in a 9×13 pan. Keep spooning and rolling until you run out of noodles.  Top with remaining sauce and cheese. Place in the oven and bake for about a half hour or until sauce bubbles on the sides and cheese has a golden color on top. 

The original recipe used a box of extra large shells. It works well with either type of noodle.  Enjoy!!
