Oh So Good Lasagna

LasagnaHow how I love lasagna! I’ve modified it slightly over the years from the recipe my Mom had created and I think I’ve finally perfected it. I’ve had people ask for the recipe and I have finally remembered to post it!

1/2 pkg, Lasagna noodle (9)

1/2 lb. hamburger

1/2 lb. hot Italian sausage

8 oz. Container of Cottage Cheese

2 c. Shredded Mozzarella Cheese

16 oz. Red Sauce

4 oz. of Fresh Baby Spinach, Chopped

Bring 1/2 pkg of Lasagna noodles to boil (9). Drain and set aside.

Brown Hamburger and sausage together (I normally will cook a pound of each then set aside half of the cooked meat for Spaghetti later in the week), drain.

Layer the lasagna in a 13×9 baking dish as follows:

Red Sauce (to cover the pan)

Noodles

Meat

Spinach

Cottage cheese

Mozzarella cheese

Red Sauce

Repeat from Noodles down until you are out of pasta (which is generally about three layers).  Sprinkle each ingredient to cover about half of the noodle. Don’t feel that the entire noodle needs to be covered for it to taste correct. The ingredients to spread out a bit while cooking.

Bake at 350° for 20-25 minutes or until the sides boil.  Let cool slightly before cutting into it to make sure that the juices from cooking have been reabsorbed by the pasta.  Serve and enjoy!
