Ice Cream Cupcakes

My family does not seem to like cake very much. We always have it for different occasions and people will take one little piece and by the end of the day we are left with half a cake that I do not need to eat.

For Adelaide’s First Birthday Party I decided that I was not going to serve cake, at least in the traditional sense. I had seen Ice Cream Cupcakes for sale and I knew that they would be easy to make at home (and a lot cheaper). Turns out, they were! Everyone loved them and I will be making them again!

Here’s how I made them:

Let ice cream sit out to soften. Scoop out ice cream into silicone cupcake liners or a silicone cupcake pan. Each cupcake is about 1 to 1/2 scoops depending on how large you like to scoop. A quart of ice cream will make 24 cupcakes.

After you’ve scooped out the ice cream let it sit a bit longer to make sure that  the ice cream has melted enough to be flat in the liner. Freeze.Melted Ice Cream

Meanwhile, make a batch of whipped cream (2 t. vanilla, 3 T sugar, 2 c. heavy whipping cream. Whip until light and airy). Put whipped cream in a bag to pipe onto cupcakes.

Once cupcakes are frozen transfer them to a paper liner (if you wish) and pipe on whipped cream. Sprinkle your favorite sprinkles over the top. Freeze.

Once the whipped cream has frozen the cupcakes are ready to serve!
