Cilantro Lime Coleslaw

I decided that we were going to try to make pulled pork tacos. My main question was, “What do you put on pulled pork tacos?” Well the answer is “duh”; coleslaw! Everyone in the south knows that’s how you eat pulled pork. We are just a bit slower on the uptake here in the Midwest.

I wanted something to compliment the smoky meat and found a recipe for cilantro lime coleslaw. The original recipe was a bit vague and had some ingredients that were not in my kitchen.  Here’s my version with measurements!


Cilantro Lime Coleslaw

3 T. Lime Juice
1/4 c. Mayonnaise
1 t. Olive Oil
1 T. Sugar
2 t. Dried Cilantro
1/2 t. Red Pepper Flakes
1/4 t. Salt

Mix dressing well and let it sit up for at least an hour to let the flavors mend well together.

Mix dressing with 1/2 bag of coleslaw cabbage mix and refrigerated until ready to serve! 


  1. I added Sriracha sauce to my taco 🙂
