Annoucing Baby #3

I’ve been away for months now and this is the number one reason! Baby #3 should make his or her debut the early part of July this summer. We are very excited and can’t wait for the craziness that three amazing children will bring!

Easy Knit Skirts

While I was pregnant the only bottoms that fit comfortably were skirts. I decided that it was going to be cheaper to make them myself.

This was my first attempt. The skirt is four pieces that all have a slight A-line to them. The waistband was as long as my waistline and double the height of what I was wanting so that it would double over nicely for the waistband. The knit stretches a bit more than I would like as far as the waistband is concerned.

The second attempt knit was not as stretchy. Again I went with an A-line but I cut it longer across so that I could gather it a bit and have a nice fuller effect. The waistband was done the same as the first skirt. Unfortunatly this one has too little of a stretch and the waistband did not work. I took it in and then it pulled too much when I would put it on. On to the third attempt!

The final skirt I did followed the same cut for the second skirt but instead of using the fabric for the waist band, I used elastic. It stretches perfectly and when I was pregnant I never wore a shirt tucked in so it didn’t matter that it wasn’t a pretty waistband. After the fact, well I still don’t tuck in shirts so it’s worked perfectly!

I still wear all three skirts. I just had to add some elastic the the waistbands to make them fit a bit better post-baby.

Easter Dress

I realized this week that I never did post a picture of my Easter dress. The dress that is still one of the most difficult things I’ve had to make. I haven’t worn it since Easter thus the reason I don’t have a picture of just me in it.

Baked Kale Chips

The midwife told me I need to step up my veggie eating AND that kale, broccoli and spinach are super veggies and will help with the swelling I’ve noticed in my legs (and now my hands too;  only 12 more weeks. I can do this.) This news just happened to coincide with a post on one of my facebook groups (Naturemomma Files) on kale.

Now I am not a very good veggie-eater, never have been. If my mother were alive I am sure she would attest to that. I struggled with the first pregnancy to eat right and I am trying to be even more diligent this time around. So that being said, I bought a bundle of kale. A bundle at our Wal-mart had six stalks in it and was just under a dollar. I was going to buy two until I realized that these bundles are pretty good in size. The hubs did not look happy with the leafy arrangement I brought home but figures that I’m the one that will eat it and not him (so he thinks).

 Preheat the oven to 350 degrees. I took two stalks of leaves, washed them, shredded the stuff by hand and took the stems out. This amount spread across my cookie sheet pretty well. You are then suppose to spritz the kale with olive oil (I did not have any so I used vegetable oil). Then sprinkle on your seasoning blend. I used McCormick’s Caribbean Jerk and Mrs. Dash’s Garlic and Herb. Stick them in the oven for 8-10 minutes.

 

 

 This is what it looks like fresh from the oven. Allow the kale to cool completely and you now have kale chips! They are pretty brittle so keep that in mind when you are grabbing them to sample.

Now to be quite honest. I’m not a big fan. The Caribbean Jerk tastes better than the Garlic and Herb but the kale just seemed bitter to me. I have two stalks left and I’m really tempted to put cinnamon and sugar on them. Would that be cheating?

I will eat what I’ve made and I will make it again because really, it’s an easy way for me to get all the nutrients I need and, quite honestly, isn’t being an adult all about sucking it up and doing what you need to, even if you don’t want to?
